Then preheat the oven to 350 degrees and blind bake for 10 minutes with weights. Remove weights and bake for 8 more minutes. While the crust is cooking, cut an X on the blossom end of tomatoes and place in hot water for about 3 minutes, before moving to an ice bath. The skin should peel easily. Thinly slice the tomatoes, spread them out and grate over a sheet pan. Salt the tomatoes and allow the juices to drain for about 15 minutes to prevent the tart from becoming soggy. Layer baked pie crust with mozzarella, pesto and tomatoes (two layers). Refrigerate until ready to serve. “Summer in the South wouldn’t be the same without tomato tarts,” said Raejean Beattie, owner of Hopsewee Plantation, who shared her recipe for the traditional dish from her book “Hopsewee Cooking.” Peach Bellini • 2 cups of peach-mango juice • 2 tablespoons of peach preserves • Pour into champagne flutes, filling halfway • Top off with champagne Alternatively, Frank Arevalo, bar manager at the Obstinate Daughter, suggested Palmetto Breeze, otherwise known as a “vacation in a glass.” Palmetto Breeze • Cut a pineapple in half • Buzz it in the blender with 2 ounces of Natalie’s orange juice • Add 1 ounce of Coco Lopez • 7-8 mint leaves • ½ ounce of lime juice • Puree for 1 minute in the blender. • Combine 3 ounces of the pineapple puree mix • 1 ounce of Plantation 3 Stars White Rum • ½ ounce of Plantation 3 Stars Dark Rum • Add ice and shake vigorously for 5 seconds Serve over crushed ice, top with a splash of soda water and garnish with mint. To round off the perfect vacation, Arevalo suggested a floater of Gosling’s Rum. He also added that to make a pitcher, multiply the ingredients by six.
